House Beers

Our house beers are brewed by Jeff Young, but the beers are the voice of the member-owners!  Through tasting panels, and member-owner beer design meetings, Jeff has and will continue to brew the beers that the members want.  The beers are broken down into series–Rational, Irrational, and Infinite.  Jeff is kind of a math nerd, so you’ll see traces of math themes throughout the beer catalog.  The beer series will have something for everyone, but it’s fair to say that all the series converge on deliciousness! 

Rational Beers

Rational Beers, like rational numbers, are constructible. For example, 3/2 equals 1.5, and a traditional porter with a dose of molasses yields our Recalcitrant Dockhand. Our Rational Beers exemplify the wonderful natural consequences of combining well-defined, simple ingredients in new and creative ways. these beers won’t shock you with anything except their deliciousness.

High Esteem
One of our most conventional beers, High Esteem is akin to a pale ale with a few twists. A touch of rye, a dash of honey, and a generous dry hopping add up to make High Esteem a refreshing mix of flowers and spice. A great beer to cut the 100-degree Austin heat. 5% abv.

Double Dee
Rich and malty, Double Dee complements our High Esteem with a modest bump of malt presence, alcohol, and residual sweetness. Brewed with an addition of kettle sugar, the flavor is toasty and nutty with a hint of raisins, and is balanced by an herbal hop finish. 6% abv.

Vulcan
Imbued with the power of the Greek god of fire, Vulcan is an aggressive rye ale made with a boat-load of hops. The big, malty base has a dry, crisp rye character that holds up against the surge of earthy and fruity hop qualities. Hop heads will be in the Heavens with Vulcan. 6.5% abv.

Recalcitrant Dockhand
Recalcitrant Dockhand features a complex maltiness with notes of molasses, vanilla, and roasted coffee. Dark and mysterious, the inviting nose will draw you in to experience the satisfying and complex flavor which finishes with just a touch of hop bitterness. 5% abv.

Irrational Beers

Irrational Beers, like irrational numbers, require more than simple ingredients for their construction. From the wild fermentation of Waterloo to the depth and elegance of Rover, there’s an added complexity to these beers that’s not easily predicted. Their range will keep you coming back for more, but be careful – some of our Irrational Beers pack quite a punch.

Waterloo
A unique beer made just for Austin, Waterloo is a refreshingly and slightly sour (think lemonade) wheat ale made with the addition of fresh Texas Peaches. Dry, tart, and easy-to-drink, Waterloo will be brewed in the early summer when the peach harvest comes in. A perfect beer for summer days in Austin. 3.5% abv.

Cul Sec
A spicy beer that is remarkably drinkable, Cul Sec features tart and refreshing flavors. A touch of extra hops gives citrus notes in the aroma and just enough bitterness for a clean finish. Enjoy the velvet sledgehammer responsibly. 6% abv

Rover
A golden ale fermented with Belgian yeast, Rover is made with oodles of local wildflower honey added in the fermenter. The honey gives Rover a light and crisp body with a dry and floral finish. Named for the enigmatic enforcement tool in The Prisoner, watch out because Rover’s gonna get you! 7% abv.

Moontower
Named after the uniquely Austin structures, Moontower features liberal use of rich and roasted malts, and is aged in darkly charred oak to produce a sipping beer aimed at keeping you warm during those few months that Austin actually drops below 50 degrees. 9% abv .
